Ingredients

  • 1 lb. Omaha Steaks Beef Sirloin Tips thawed
  • Salt & pepper, to taste
  • Flour, for dusting
  • Olive oil, for searing
  • 3 cloves garlic, minced
  • 1 large onion, diced
  • 3 stalks of celery, diced
  • 1 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon chili flakes
  • 3 medium potatoes, diced
  • 4 cups low sodium beef stock
  • Heavy cream, to finish (optional)

Instructions

  • Season sirloin tips generously with salt and pepper. Dice any large pieces into bite-sized cubes and dust with flour.
  • In a heavy-bottom pot, heat oil to medium-high and sear the steak on each side until browned. Remove steak from the pan and set aside.
  • In the same pan, add garlic, onion, celery, thyme, rosemary, and chili flakes. Cook until vegetables begin to soften, about 5 minutes.
  • Add the potatoes and stock. Bring to a gentle simmer and continue cooking until the potatoes are tender, about 20 minutes.
  • Add the steak back to the pan and simmer for an additional 10 minutes.
  • When ready to serve, finish with a splash of cream.

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius ). Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork. Rub with olive oil and sprinkle generously with salt and pepper. Place the potatoes directly on the oven rack and bake for 60–75 minutes, or until the skin is crispy and the inside is tender.
  • While the potatoes are baking, heat a large skillet over medium-high heat. Add the filet mignon tips and cook for 3–5 minutes, stirring occasionally, until they are browned on all sides. The tips will be tender and juicy with this quick sear.
  • Reduce the heat to low. Add the entire package of Roasted Garlic & Herb Steakhouse Topper to the skillet with the cooked steak tips. Stir to combine, allowing the butter-based topper to melt and coat the meat. Cook for 1–2 minutes until everything is warmed through. Remove from heat and set aside.
  • Cut the potato in half and top with the garlic and herb steak tips. Optional to add extra toppings such as sour cream and green onions. Enjoy!

  • Slice steak tips into roughly 3/4" size pieces.
  • Place the steak bites into a mixing bowl and toss with one tablespoon of oil until evenly coated. Add 2 tablespoons of Cajun seasoning and mix until the steak is evenly seasoned. Set aside.
  • Heat 2 tablespoons of oil in a large heavy-bottom skillet over high heat until the oil is shimmering and just starting to smoke. Add steak bites in batches and allow them to sear. When the steak is all seared, remove from pan, and reduce heat to medium.
  • Deglaze the pan with white wine, being sure to scrape up all the brown bits on the bottom of the pan. Add the butter to the pan and allow it to melt. Add the mushrooms and move them around until they are coated in the fond. Then, add the jalapeños and cook for 2 minutes.
  • Add the steak bites back into the mushroom and butter mix and fold in to coat all the steak.
  • Spoon the steak over top of garlic mashed potatoes and pour the remaining butter sauce over the top.

  • Thaw filet mignon steak tips and fully cooked bacon slices overnight in the refrigerator.
  • Preheat oven to 450 degrees Fahrenheit.
  • Sprinkle filet mignon tips with seasoning to taste.
  • Wrap a slice of bacon around each filet mignon tip and secure bacon with toothpick.
  • Place bacon-wrapped filet mignon tips on a baking sheet. Bake for 3 minutes, then flip and bake an additional 2-3 minutes. Serve immediately.

  • Preheat a medium nonstick skillet to medium high. Add 1 tablespoon oil and ½ of the steak pieces. Sauté 3-4 minutes until steak pieces have browned and reached desired level of doneness. Remove from pan and repeat with remaining steak pieces. Remove steak pieces from pan and set aside.
  • Add 1 tablespoon oil and ½ package of fries to pan. Sauté for 5-7 minutes until fries are crispy. Remove fries from pan add 1 tablespoon oil and repeat with remaining fries.
  • Remove fries from pan and serve with steak pieces.

Mashed Potatoes:

  • Toss thawed steak pieces with 1 tablespoon rub.
  • Preheat a medium nonstick skillet to medium high. Add 1 tablespoon oil and ½ steak pieces. Sauté 3-4 minutes until steak pieces have browned and reached desired level of doneness. Remove steak pieces from pan and repeat with remaining steak pieces. Remove steak pieces from pan and set aside.
  • Add 2 tablespoons oil and cooked mashed potatoes to the pan. Press potatoes to flatten to edges of pan. Reduce heat to medium and cook for 5 minutes.
  • Invert a plate over the top of your sauté pan. Flip pan over so the potatoes release to the plate. Top with steak pieces and serve.

Notes

Chefs Tip: For a quick Poutine top either of these recipes with your favorite cheese curds and brown gravy.
Top with a garlic aioli sauce, if desired.
