Bacon-Wrapped Tenderloin Tips with Maytag Cheese

- 1 lbs. Omaha Steaks Tenderloin Tips
- 32 slices Omaha Steaks Precooked Bacon
- 1/4 cup canola oil
- 4 oz. Maytag blue cheese
- 2 Tbsp. balsamic vinegar glaze, reduced
- 2 Tbsp. minced chives
- 1 tsp. Omaha Steaks All Natural Seasoning
- 32 each tooth picks
- Preheat a cast iron skillet on high.
- Thaw and blot dry the Tenderloin Tips. Trim the pieces so they are about 0.5 oz. and not as tall as a slice of bacon.
- Season the Tenderloin Tips with the All-Natural Seasoning.
- Add the oil to the cast iron skillet and heat briefly.
- Add the seasoned tips the skillet and cook for 1 minute while stirring. (Just long enough the sear the sides but keep the center raw).
- Quickly remove the tips for the skillet and cool in fridge.
- Thaw the bacon slices by heating a packet in the microwave for 1 minute.
- Wrap seared tips with bacon and hold them together with a tooth pick.
- Stand the wrapped tips up on a sheet pan so that the bacon is on its side leaving some space in between.
- Pack about 1 tsp. of cheese in the center of the bacon. Cover pan with plastic film and refrigerate until service.
- Preheat oven to 450 and heat the bacon-wrapped tips for 5-8 minutes or until cheese is melted.
- Remove from oven and transfer to serving plate.
- Drizzle with balsamic vinegar glaze and sprinkle with minced chives before serving.
