Bacon-Wrapped Tenderloin Tips with Maytag Cheese

  • 1 lbs. Omaha Steaks Tenderloin Tips
  • 32 slices Omaha Steaks Precooked Bacon
  • 1/4 cup canola oil
  • 4 oz. Maytag blue cheese
  • 2 Tbsp. balsamic vinegar glaze reduced
  • 2 Tbsp. minced chives
  • 1 tsp. Omaha Steaks All Natural Seasoning
  • 32 each tooth picks


  • Preheat a cast iron skillet on high.
  • Thaw and blot dry the Tenderloin Tips. Trim the pieces so they are about 0.5 oz. and not as tall as a slice of bacon.
  • Season the Tenderloin Tips with the All-Natural Seasoning.
  • Add the oil to the cast iron skillet and heat briefly.
  • Add the seasoned tips the skillet and cook for 1 minute while stirring. (Just long enough the sear the sides but keep the center raw).
  • Quickly remove the tips for the skillet and cool in fridge.
  • Thaw the bacon slices by heating a packet in the microwave for 1 minute.
  • Wrap seared tips with bacon and hold them together with a tooth pick.
  • Stand the wrapped tips up on a sheet pan so that the bacon is on its side leaving some space in between.
  • Pack about 1 tsp. of cheese in the center of the bacon. Cover pan with plastic film and refrigerate until service.
  • Preheat oven to 450 and heat the bacon-wrapped tips for 5-8 minutes or until cheese is melted.
  • Remove from oven and transfer to serving plate.
  • Drizzle with balsamic vinegar glaze and sprinkle with minced chives before serving.
