Grilled Shrimp Tostadas

  • 12 oz. Omaha Steaks White Wild Shrimp (#2426)
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Omaha Steaks All Natural Seasoning
  • 4 Tostada Flats
  • 1 cup Canned Refried Beans
  • 1 cup Shredded Romaine Lettuce
  • 1 cup Guacamole
  • 1 cup Pico De Gallo
  • 2 Tbsp Shredded Cotija Cheese
  • 4 Cilantro Sprigs
  • 4 Lime Wedges
Pico De Gallo
makes 1-1/4 cups
  • 3/4 cup Roma Tomato (diced into 1/4" pieces)
  • 3 Tbsp. White Onion (1/4" Dice)
  • 1 Tbsp Cilantro (Chopped very fine)
  • 1 tsp Jalapenos (Minced very fine with the seeds)
  • 1 tsp Lime Juice (Fresh Squeezed)
  • 1/2 tsp Sea Salt
makes 1 cup
  • 2 each Avocados, medium (Peeled, seeded and 1/2" chop)
  • 1 Tbsp Lime Juice, fresh
  • 1/4 cup Pico De Gallo
  • 1 tsp Garlic, minced
  • 1 Tbsp Olive Oil
  • 1/2 tsp Jalapeno, minced
  • 1/2 tsp Sea Salt
  1. Thaw shrimp in cold water.
  2. Preheat grill to high.
  3. Place shrimp In a bowl and toss with 2 Tbsp Olive Oil and 1 Tbsp Omaha Steaks All Natural Seasoning.
  4. Grill shrimp 2-3 minutes per side, depending on size of shrimp.
  5. Heat the refried beans and put a dab on each plate to hold the tostada flat in place. Spread the remaining beans on each tostada.
  6. Spread shredded Romaine on top of the beans, followed by the Guacamole and the Pico De Gallo.
  7. Top each with 3-4 large grilled shrimp and sprinkled with grated Cotija Cheese.
  8. Garnish each with a cilantro sprig and a lime wedge
