Ingredients

  • 2 T. oil
  • 8 oz mushrooms sliced

Marinade

  • ¼ c. olive oil
  • ¼ c. tarragon vinegar
  • 2 cloves garlic minced
  • ¼ tsp. oregano dried
  • ¼ tsp. parsley dried
  • ¼ tsp. thyme dried
  • ½ tsp. kosher salt
  • ¼ tsp black pepper

Instructions

  1. Pre heat a medium skillet to medium high. Add 2T. oil, mushrooms and salt. Sauté, stirring occasionally for 5-7 minutes or until mushrooms soften and brown. Take off heat and let stand for 5 minutes. Drain and excess liquid off mushrooms.

  2. Combine all ingredients for mushrooms in a medium bowl. Add mushrooms and marinate for at least 15 minutes. Can be marinated up to 3 days in advance covered in the refrigerator.
