Turkey Melt with Cranberry Pesto Sauce
Put your holiday leftovers to tasty, tasty use with this easy recipe! You'll jazz up your turkey slices with pesto, cranberry sauce, mozzarella, and melt it all in a hot skillet... are you hungry yet?
Ingredients
  • 4 slices (1/2-inch thick) sourdough bread
  • 4 tablespoons butter, softened
  • 1/4 cup prepared pesto
  • 1/4 cup whole berry cranberry sauce
  • 4 thin slices leftover roasted turkey breast
  • 4 slices fresh mozzarella cheese
Preparation
  1. Heat a heavy skillet over medium heat.
  2. Spread one side of each bread slice with butter. Spread the other side of each slice with pesto.
  3. Place 2 of the bread slices in the skillet, butter side down.
  4. Top each with cranberry sauce, turkey, cheese and the other two slices of bread, butter side up.
  5. Cook, turning once, 6-8 minutes or until golden brown and cheese is melted.
