Fish Tacos with Mexican Slaw
There's nothing better or fresher than a well-made fish taco, and this recipe uses Omaha Steaks easy Pub-Style Cod to make them simpler than ever. A zesty slaw made with carrots, cucumbers, jicama and cabbage provides the crunch and a splash of lime provides the zesty finish.

Ingredients
  • 1 package Omaha Steaks Pub Style Cod
  • 1 cup carrots, peeled and cut into matchsticks
  • 1 cup cucumbers, peeled and cut into matchsticks
  • 1 cup jícama, peeled and cut into matchsticks
  • 1 cup green cabbage, shredded or thinly sliced
  • 1 cup red cabbage, shredded or thinly sliced
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh squeezed lime juice
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons Chipotle in Adobo sauce
  • 1 teaspoon kosher or sea salt
  • freshly ground pepper to taste
  • 12 each 6" Flour Tortillas
Preparation
  1. Preheat oven to 425. Place cod on a baking sheet. Once oven is hot, bake for 15 to 17 minutes, flipping once in between.
  2. In a medium mixing bowl place carrots, cucumbers, jícama, green and red cabbage.
  3. Combine with mayo, lime juice, vinegar, Chipotles in Adobo sauce, salt and pepper. Mix well.
  4. Heat corn or flour tortillas. Tuck with battered cod, Mexican slaw and add an extra squeeze of lime if desired.
