Mushroom Cream Sauce

This versatile creamy mushroom sauce recipe adds richness and savory flavor to steak, pork, chicken, potatoes, or vegetables.

Ingredients

  • 8 ounces baby bella mushrooms sliced
  • 1 cup heavy cream
  • 1/4 cup minced shallots
  • 6 tablespoons olive oil
  • 2 garlic cloves, thinly sliced
  • 1/2 teaspoon fresh rosemary, minced
  • 1/2 teaspoon fresh thyme, minced
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh Italian parsley, minced
  • Salt and pepper, to taste

Instructions

  • On medium-high heat, add olive oil to large saucepan.
  • Add mushrooms to pan and sauté for 2 minutes until tender.
  • Add shallots, garlic, rosemary, thyme, butter, and a pinch of salt and pepper, and sauté for an additional 35 to 40 seconds.
  • Add heavy cream, bring to a boil, then reduce to medium heat. Continue to cook for about 5 minutes until reduced by 1/3 and thickened to sauce-like consistency.
  • Season to taste with salt and pepper, add parsley, and stir until well incorporated.
  • Serve hot with desired protein.

Ingredients

  • 12 ounces salted butter
  • 1/2 lemon, juice
  • 1 tablespoon minced garlic
  • 1 tablespoon lemon zest
  • 1 tablespoon Dijon mustard
  • 2 tablespoons paprika
  • 1 teaspoon cayenne
  • 2 tablespoons parsley, minced
  • 1 tablespoon chives, minced
  • 1 tablespoon red pepper flakes

Instructions

  • In a saucepan on low heat, add butter, lemon juice, garlic, lemon zest, Dijon mustard, paprika, and cayenne, and whisk until it forms a sauce (do not let it break).
  • Turn off the heat and add parsley, chives, and red pepper flakes. Mix until well incorporated.

Notes

Note: If the sauce breaks, place in the refrigerator to cool. It will thicken and turn back into a sauce.

Ingredients

  • 1 large shallot minced
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon toasted sticky rice powder
  • 1/2 cup cilantro, chopped
  • 1 tablespoon dried red chili flakes or 2 small fresh Thai chilis, finely minced

Instructions

  • Mix sauce ingredients together.
  • Top sliced steak with crying tiger sauce.

Ingredients

  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons whole black peppercorns, coarsely crushed
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste

Instructions

  • Coarsely crush the black peppercorns with mortar and pestle or a spice grinder. You want them to be visibly crushed but not ground into a powder.
  • In a saucepan, melt the butter over medium heat.
  • Add the crushed peppercorn to the melted butter and sauté for 1 to 2 minutes until fragrant.
  • Add the heavy cream, Dijon mustard, and Worcestershire sauce and whisk to combine.
  • Allow the sauce to simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes or until it thickens to your desired consistency.
  • Taste the sauce and adjust the seasoning.
  • Pour the classic peppercorn sauce over your pan-seared steak just before serving.

This Korean-inspired sauce adds bold, spicy, and savory flavors to steak for a unique Asian twist to the dish.

Ingredients

  • 2 teaspoons spicy sesame oil
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 cup ketchup
  • 1/3 cup gochujang
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons tamari
  • Salt & pepper, to taste
  • 1 pinch cayenne pepper, optional for extra spice

Instructions

  • In a skillet over low heat, add sesame oil, garlic, and ginger, and cook until fragrant.
  • Whisk in ketchup, gochujang, rice wine vinegar, tamari, salt, pepper, and cayenne (if using). Cook until sauce begins to bubble and thicken slightly.
  • Remove from heat and cool completely. Transfer to a glass jar for storage.
  • Serve with your favorite cut of Omaha Steaks.

Ingredients

  • 3 garlic cloves, finely minced
  • 1 small shallot, finely chopped
  • 1 red jalapeño, seeded and finely chopped
  • ¾ cup finely chopped fresh cilantro
  • ¾ cup finely chopped fresh flat-leaf parsley
  • 1 cup extra-virgin olive oil
  • 1.5 Tbsp. red wine vinegar
  • 3 Tsp. kosher salt, or to taste
  • 1 Tsp. lemon juice

Instructions

  • Combine all ingredients in a mixing bowl.
  • Whisk together and scrape down the sides of the bowl.
  • You can eat it right away, but it's always better after it sits for an hour or so.

Notes

Notes: If you can’t find a red jalapeño, try a teaspoon of crushed red pepper flakes instead. If you can’t find shallots, try using red onions instead. Season with salt to taste.
