What is a beef brisket flat?

The beef brisket has bold, beefy flavor and is a versatile cut of beef. A whole brisket consists of the flat and the point, two large sections separated by a natural layer of fat. The flat is the leaner and larger of the two. Omaha Steaks beef brisket flats are aged a minimum of 28 days to maximize tenderness and the fat is removed. The roast is ready for your recipes. No extra trimming necessary.

How to cook a beef brisket flat

This beef brisket flat can be braised, smoked or slow roasted in the oven. This Simon family recipe uses traditional oven cooking with a low and slow method at 250°F for four hours. You will want to cook the brisket until the internal temperature as measured by a meat thermometer, reaches 180°-185°F.

This recipe couldn’t be simpler. Simply mix together the onion soup mix, cranberries and chili sauce and spoon over the brisket in a roasting pan. Then, pour ginger ale around the edges of the brisket and cook low and slow until the internal temperature reaches 180°-185°F. It’s that easy!

  • Preheat oven to 250⁰ F. Place brisket in a large ovenproof baking dish.
  • Mix onion soup mix, cranberries and chili sauce in a bowl. Spoon over the top of the brisket. Pour ginger ale around the edges of the brisket.
  • Cover with foil and bake 4 hours.
  • Remove from oven, let rest 20 minutes. Remove brisket from baking dish and place on cutting board. Slice brisket against the grain and place in serving dish. Top with sauce and serve.


Chef’s tip: When you have leftover sliced brisket, place it in a clean baking dish, top with sauce and refrigerate at least overnight and up to three days. Preheat oven to 350⁰ F and reheat brisket for 1 hour. This saves time and the leftover brisket is better after resting in the sauce.
