How to Grill Snapper
While some fish may sound intimidating to cook on the grill, red snapper can be grilled to perfection with ease in under 30 minutes.
Tools You’ll Need Before You Start
- Fish Basket
- Fish Spatula
- Nonstick Cooking Spray
1. Thaw Snapper & Bring to Room Temperature
To thaw, remove fillets from plastic packaging, cover, and thaw in refrigerator for at least 7 hours. To thaw faster, remove product from original packaging, place in a resealable bag, and submerge bag in cold water for 30 minutes to 1 hour. Once thawed, be sure to consume your snapper within two days.
2. Prep Grill and Preheat to High Heat
Clean and oil grill grates. Don’t skip this step! Clean grill grates will ensure that any leftover remnants don’t taint the delicate flavor of the snapper. Preheat your clean grill to 400°F direct high heat. To oil grates safely, use tongs to coat a folded paper towel in cooking oil and use tongs to lightly rub on the grill grates. Avoid using cooking spray on a hot grill due to the potential for flareups.
3. Season Snapper
Allow your snapper to come to room temperature for 15 to 20 minutes, then pat dry. Brush with olive oil, and season with salt, pepper, and smoked paprika. Alternatively use your favorite seasoning blend or try Omaha Steaks Signature Seafood Seasoning.
4. Grill Snapper
A fish basket is not necessary to grill snapper but will lessen the likelihood of the fish falling apart on the grill. Spray your fish basket with nonstick cooking spray and place red snapper fillet skin-side down. Add at least two sprigs of fresh thyme, two crushed garlic cloves and a lemon slice on each fillet. Close the basket securely. If you’re not using a fish basket, place the seasoned fillets skin-side down directly over the high heat. The skin acts as an insulator so that the fish cooks evenly.
Grill over direct high heat for 4-5 minutes on the first side, then flip to the other side and cook another 3-4 minutes until the fish is crisp and brown with an internal temperature of 145°F. Chef Tip: Don’t flip your fish too early. This could cause the fillet to fall apart. If you must work or scrape at all to get your spatula underneath the fish, it’s not ready to flip.
5. Serve
After grilling your snapper to perfection, top with freshly squeezed lemon and serve with lemon wedges. Snapper pairs beautifully with grilled asparagus or roasted vegetables while served on a bed of rice or a green salad. End your picture-perfect meal with a delicious dessert and enjoy!
