Using Lucky Bucket’s classic styles and big barrel-aged ales, I’ve crafted a handful of sauces and marinades to pair exclusively with gourmet food from Omaha Steaks. To see more beer-inspired recipes, click here. One of my favorite ways to incorporate beer into food is using it in a marinade. This particular marinade works well with pork or chicken, but can even be used with meatier fish. I used Lucky Bucket Heartland Wheat which they make down the street from our test kitchen. You can use any local wheat beer or Hefewizen style beer. I find this style of beer works very well in this marinade. One of the best things about using a beer in a marinade is that it pretty much guarantees that you will end up with a food that pairs well with the beer that you used. Cheers! Chef Karl Lucky Bucket Heartland Wheat Marinated Boneless Pork Chops By Omaha Steaks Executive Chef Karl Marsh Prep Time 12 minutes + 4 hours Marinade Time Cook Time 8 minutes Total Time 4 hours and 20 minutes Serves 4-6 Ingredients: 8 each Omaha Steaks 4 oz. Boneless Pork Chops (Thawed) 1/2 cup olive oil 1 each Lucky Bucket Heartland Wheat 1/4 cup lemon juice 1 Tbs. Fresh garlic, minced 2 teaspoons sea salt 1 teaspoon freshly ground black pepper 1 teaspoon dry mustard 1 teaspoon dark chili powder Procedure: 1. Combine all ingredients except pork chops in a mixing bowl and mix well. 2. Pour marinade in a 1 gallon zip-lock plastic bag and add pork chops. 3. Let marinade in the fridge for 4-6 hours. 4. Preheat grill to high. 5. Remove pork chops from marinade. 6. Grill over high heat 3-4 minutes per side, or until internal temperature reaches 145 degrees. 7.
