Summer is officially here, and that means dusting off our grills and getting them ready for the season ahead. I love grilling season more than anything. It’s not just about the sensational barbeque we will inevitably experience while the weather is warm, but it’s about the gatherings that happen and the recipe ingenuity I have experienced through the years. Nowadays you can pretty much use your grill to make anything! And you should.
Right now I’m going through a big flatbread and pizza grilling phase. I adore the extra flavor and char the crust gets, and it is the perfect way to get your flatbread cravings fulfilled all summer long without turning on a hot oven.
This particular flatbread has become my absolute favorite. It’s made with Omaha Steaks Marinated Flank Steaks. These steaks are so tender and have so much flavor from the various spices and herbs that I adore just throwing them on the grill and eating them as is or adding to my tacos and fajitas. They are just sensational! However, I thought it would be fun to add slices of this amazing steak to a grilled flatbread.
First, I grilled the flank steak until just barely done because it would continue to cook once added to the flatbread. I let it rest then cut into slices before starting on my dough. My flatbread begins with a traditional pizza dough that you can either buy from your local grocery store for added convenience or make your own. It is totally up to you. I brushed my crust with olive oil and grilled on both sides until it was perfectly charred and puffed up on the grill. Then I added my sliced steak and other ingredients such as sliced tomato, spinach, shredded cheese and a few drizzles of olive oil. I covered the grill and let it continue to cook until everything melted together into pure grilled deliciousness.
I could not get enough of this recipe. Seriously, my husband asked me when I would be making it again. I know one thing’s for sure: this flatbread recipe will definitely be making multiple appearances on my grilling menu all summer long.
Grilled Flank Steak Flatbread
Ingredients
- 1 Omaha Steaks marinated flank steak
- Your favorite pizza dough (homemade recipe or store-bought)
- 1/4 cup extra virgin olive oil, divided
- 1/4 cup thinly sliced tomato
- 1/4 cup spinach
- 1/2 cup shredded cheese of your choice
Instructions
- Brush flank steak with 2 T of olive oil on both sides.
- Place steak on hot grill and cook on each side for 3-4 minutes until perfectly charred then remove and allow to rest for 15 minutes.
- Slice steak into smaller pieces for flatbread. The steak should be slightly less cooked than your usual desired doneness.
- Next roll out your pizza dough to a standard individual or small crust size.
- The larger you roll the dough, the harder it will be to place it on the grill so the smaller, the better. Brush one side with half of remaining olive oil and place olive oil side down on hot grill.
- Brush the remaining olive oil on the dough facing up.
- Once dough has cooked up on down side and is no longer doughy, flip the crust over on the grill. Cook until dough is set.
- Top crust with steak slices, tomato, spinach and cheese and cover grill.
- Allow tomato to get tender and cheese to melt.
- Once done, remove from grill and let rest 5 minutes before serving.
