Grilled Chicken Quesadilla with Pico De Gallo

This quesadilla makes a hearty snack or an easy meal. Filled with Omaha Steaks Grilled Chicken Breast meat, it's seasoned with pico de gallo, which can also be served on the side for dipping.

Ingredients

  • 1 ea. 10" flour tortilla
  • 1 Tbsp. grated Parmesan
  • 1/2 cup grated Monterey Jack cheese
  • 1 ea. grilled chicken breast sliced
  • 3 Tbsp. pico de gallo

Pico de Gallo:

  • * Makes about 3 cups
  • 2 cups small Roma tomatoes diced into 1/4" pieces
  • 1/2 cup white onion 1/4" dice
  • 3 Tbsp. cilantro chopped very fine
  • 1 Tbsp. Jalapeños minced very fine with the seeds
  • 1 Tbsp. lime juice fresh squeezed
  • 1 tsp. kosher salt

Instructions

  • Start by heating a non stick 12" pan over medium low heat.
  • Next place the tortilla in the pan and sprinkle with 1/2 oz grated parmesan.
  • Flip over the tortilla with the parmesan cheese side down in the pan.
  • Next sprinkle with the Monterey Jack cheese
  • Carefully spread out the slices of grilled chicken breast on the quesadilla.
  • Sprinkle 3 Tbsp. of pico de gallo in the quesadilla
  • Check that the parmesan side of the tortilla is brown then fold the quesadilla in half.
  • Remove from pan and place on a cutting board.
  • Cut into 4 even pieces and place on a warm plate.
  • Serve with pico de gallo on the side.
