Meatball Marinara Sub Sandwiches

Weeknights have gotten super crazy for me. I’ve taken to doing marathon prep cooking on the weekends so that my freezer and pantry are stocked with go-to items that I can easily defrost or cook when I barely have two minutes.

Marinara is one of those items I prep and freeze. Plastic storage bags make freezing it easy, since they can lay flat and stack. And bonus! I can throw it in the refrigerator in the morning and by evening, it’s defrosted and ready for whatever easy magic I’ve dreamt up, such as these  Meatball Marinara Sub Sandwiches.

The beauty of this is that you don’t even have to defrost their All-Beef Meatballs before you start cooking. Just throw the frozen meatballs in with the marinara and bring it up to a simmer, slide them into a bread roll with some cheese, and broil it until it’s all happy. Add a big fat side salad and you’ve got dinner in the bag!

Meatball Marinara Sub Sandwiches

  • 1 cup diced onion
  • 2 Tbsp. olive oil
  • salt and pepper
  • 4 cloves chopped garlic
  • 1 28 oz. can crushed San Marzano tomatoes
  • 1 small can diced Italian style tomatoes
  • 2 Tbsp. Italian herbs from the squeeze bottle in the produce aisle
  • 1/2 cup red wine
  • 1/2 tsp. red pepper flakes
  • 2 Tbsp. brown sugar
  • 1 package Omaha Steaks All-Beef Meatballs
  • 4 Dutch crunch rolls
  • 8 slice Mozzarella


  1. In a large high-sided skillet, sauté onions in olive oil over medium heat until soft, about 10 minutes. Salt and pepper the onions, then add the garlic.

  2. Sauté until the fragrance dissipates.

  3. Add the crushed tomatoes, diced tomatoes, Italian herbs, red wine, red pepper flakes, and brown sugar.

  4. Simmer over low heat for 30 minutes, stirring frequently.

  5. Add meatballs to the skillet and create a single layer.

  6. Spoon the marinara over them and cover the pan.

  7. Simmer on low for 30 minutes.

  8. Slice each roll in half lengthwise, line with cheese, then place three meatballs in each roll with a little extra marinara.

  9. Broil for 3-5 minutes or until the cheese is bubbly.

  10. Serve immediately.
