How To Choose The Right T-Bone Or Porterhouse Steak?

First, decide if you want a bigger filet or strip in your steak. If you want the bigger filet, then the Porterhouse is your steak. If it's the strip, then go for the T-Bone. Each steak should be hand carved by a master butcher to ensure you get the most flavor possible.

What Is A T-Bone Or Porterhouse Steak?

T-bones and Porterhouses are true steak lovers steaks, because they contain the best of two steaks put together--the strip steak and the filet mignon--joined by the familiar T-shaped bone. This means you get the moderate tenderness and big flavor of a strip steak combined with the tenderness and delicate flavor of a filet mignon. Porterhouse steaks are cut from the rear end of the short loin and include a larger tenderloin steak (filet mignon) than T-bone steaks, which are cut closer to the front and contain a smaller section of tenderloin.

What Should You Expect From A T-Bone Or Porterhouse Steak?

While not as tender as a filet mignon, the strip side of a T-bone or porterhouse is moderately tender, which is one of the reasons people love it--for its great bite and solid chew. The beauty of a T-bone or porterhouse is that you get two different, but equally amazing, steak experiences all in one. The New York Strip has a firmer bite and delivers a bold, intensely beefy flavor.

How Do I Cook A T-Bone Or Porterhouse?

T-bone and Porterhouse steaks are best cooked rare to medium rare. Although we do not recommend cooking these steaks beyond medium rare, these steaks will still deliver a great experience at any temperature.
