The Omaha Steaks Butcher's Cut Filet Mignon delivers a closer trim as part of a leaner, upgraded filet mignon experience. So you're getting super-tender filet mignon steaks that are hand-selected for world-class quality, aged at least 30 days for maximum tenderness (the grocery store doesn't do that), carefully trimmed then trimmed again, and flash-frozen to preserve steak perfection.

What's so special about filet mignon? Tenderness. Filets are carved from the tenderloin, a very small portion of beef that's prized specifically for its easy-to-cut texture and blissfully mild flavor. The filet mignon's diminutive size is also what makes it so valuable - there's simply less of it available than other steaks. The beef is aged at least 30 days, a natural process that maximizes the tenderness of the filet mignon and is guaranteed to make each steak fork-tender when it's delivered to you.
