How This Roast is Carved
A whole brisket consists of the flat and the point, two large sections separated by a natural layer of fat. The flat is the leaner and larger of the two - when you see stereotypical rectangular slices of brisket, you're usually looking at slices of the flat. For this roast, our best brisket flats have been separated and the fat has been removed. Every Omaha Steaks brisket is aged at least 28 days to naturally maximize tenderness - cook this roast slowly and you will love the results.
