Renowned for its rich, buttery flavor and tender, delicate texture…Sablefish has become very popular on the menus of many high-end restaurants and among food aficionados in the U.S. And now thanks to Omaha Steaks, you can easily prepare and enjoy it in your own kitchen.

Few fish are as silky rich in Omega-3 levels as the sablefish, and its high-fat content lends itself to cooking in a variety of ways - even the novice cook need not worry because the fat acts as a buffer against overcooking. And because our Skin-On Sablefish Fillets have the skin on, they deliver an exceptional treat when cooked until crisp…but they are delicious any way you choose to prepare them on the grill, in the smoker or sauteed in a pan.

Thaw in refrigerator. When thawing, remove from plastic packaging. Cover and refrigerate below 38°F. Once thawed, consume within 1-2 days.
SEAR ROAST: Preheat oven at 300°F. Pat dry and season desired number of fish fillets. Preheat an oven-proof skillet with 2 tsp. of cooking oil to medium-high. Carefully place sablefish skin side down in hot pan. Cook for 6 minutes on first side. Carefully flip fish, then place skillet into preheated oven. Cook for 8-10 minutes or until fish is opaque and reaches an internal temperature of 145°F.
PAN SAUTÉ: Pat dry and season desired number of fish fillets. Preheat a skillet with 2 tsp. of cooking oil to medium-high. Place sablefish in pan skin side down and cook for 5-6 minutes. Carefully flip fish and cook an additional 5-6 minutes or until fish is opaque and reaches an internal temperature of 145°F.
BROIL: Preheat broiler and position top rack 2-3" from broiler. Pat dry and season desired number of fish fillets. Brush with olive oil or melted butter, season and place skin side down on an oven-proof, foil-lined baking sheet. Broil sablefish 5-6, flip fillets, and broil an additional 5-6 minutes or until fish is opaque and reaches an internal temperature of 145°F.
GRILL: Preheat grill to medium (about 400°F). Oil grill grates. Pat dry, lightly oil, and season desired number of fish fillets. Place sablefish on grill skin side down. Grill fillets covered 5-6 minutes, or until skin releases easily from grill grates. Flip fillets and grill an additional 5-6 minutes, or until skin releases easily from grill grates.
