So you're getting super-tender filet mignon steaks that are hand-selected for world-class quality, aged at least 21 days for maximum tenderness (the grocery store doesn't do that), carefully trimmed then trimmed again, and flash-frozen to preserve steak perfection.

Filets are carved from the tenderloin, a very small portion of beef that's prized specifically for its easy-to-cut texture and blissfully mild flavor. The filet mignon's diminutive size is also what makes it's so valuable - there's simply less of it available than other steaks.
