Chipotle-Glazed Pork Chops With Grilled Pineapple Salsa
Chipotle Glaze
- 1 tablespoon canned chipotle chiles in adobo sauce, puréed
- 1 tablespoon fresh lime juice
- 2 tablespoons freshly chopped cilantro
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Grilled Pineapple Salsa
- 1/2 pineapple
- 1 red bell pepper
- 1/2 white onion
Grilled Pineapple Salsa
Peel pineapple and slice into 1/4"-thick slices. Cook on hot grill until both sides have grill marks; cool completely, remove core, and dice into 1/4" pieces.
Roast red peppers, then peel and de-seed. Dice into 1/4" pieces.
Peel onion and slice into 1/4"-thick slices. Cook on a mesquite grill, then cool completely and dice into 1/4" pieces.
Combine all ingredients in a large mixing bowl and mix well.
Chipotle-Glazed Pork Chops With Grilled Pineapple Salsa
Preheat grill to high.
Season thawed pork chops with Omaha Steaks Seasoning and place on grill.
Cook pork chops for 4-5 minutes on each side until internal temperature reaches 145 degrees Fahrenheit, as per a meat thermometer.
To create glaze, add puréed chiles, lime juice, cilantro, salt, and pepper to a small saucepan and allow all ingredients to melt, heat, and thicken slightly. Once desired consistency has been achieved, remove from heat.
Plate pork chops, spoon hot glaze over the tops, and serve with pineapple salsa.
