Chipotle Mayonnaise
- 1 cup mayonnaise
- 1 tablespoon garlic, chopped
- 1 tablespoon canned chipotle chile in adobo sauce, puréed
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon kosher salt
Pico de Gallo
- 2 cups Roma tomatoes, 1/4" diced
- 1/2 cup white onion, 1/4" diced
- 3 tablespoons cilantro, finely chopped
- 1 tablespoon jalapeño, minced very fine with the seeds
- 1 tablespoon freshly squeezed lime juice
- 1 teaspoon kosher salt
Southwest Burger
- 1 6 oz. Omaha Steaks Burger
- Southwest chipotle seasoning to taste
- 1 whole wheat bun
- 2 tablespoons chipotle mayonnaise
- 2 tabelspoons pico de Gallo
- 1/4 avocado, sliced
Chipotle Mayonnaise
Add mayonnaise, chopped garlic, puréed chipotle chile in adobo sauce, freshly squeezed lime juice, and kosher salt to a medium bowl and combine until well incorporated.
Chef’s Note: Makes about 8 servings and can be stored inrefrigerator for up to 1 week.
Pico de Gallo
Add diced Roma tomatoes, diced white onion, chopped cilantro, minced jalapeño with seeds, freshly squeezed lime juice, and kosher salt to a medium bowl and combine until well incorporated.
Chef’s Note: Makes about 3 cups.
Southwest Burger
Season burger with your favorite Southwest chipotle seasoning.
Grill, broil, air-fry, or pan-fry burger until internal temperature reaches 160degrees Fahrenheit.
Slice bun in half and toast on grill or broiler.
Spread 1 tablespoon of chipotle mayonnaise on each half of bun.
Place cooked burger on bun and top with pico de gallo and avocado slices. Place remaining bun on top.
