Ingredients

Blackberry Bourbon Glaze

  • 1 1/2 cups blackberries
  • 1 cup bourbon
  • 1/4 cup sherry vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons Dijon mustard
  • 3 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons granulated garlic
  • 1 8-lb. Omaha Steaks Spiral Sliced Ham thawed

Fennel Apple Slaw

  • 2 bulbs fennel, chopped into thin strips
  • 2 green apples, chopped into thin strips
  • 1 bunch of chives, chopped
  • 1 tablespoon Dijon mustard
  • 1/3 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 2 teaspoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/3 cup slivered almonds

Instructions

Blackberry Bourbon Glaze

  • Begin by combining blackberries, bourbon, sherry vinegar, brown sugar, Dijon mustard, salt, pepper, and granulated garlic in a medium sauce pot over medium-high heat.
  • Let simmer on medium-high heat for 18-20 minutes, until the blackberries break down and the sauce begins to thicken.
  • Remove bourbon glaze from the heat and set aside.
  • Remove spiral sliced ham from packaging, and warm it in the oven according to instructions. Remove and set on a platter, separate the slices, and spoon the glaze over the top to serve.

Fennel Apple Slaw

  • In a medium bowl, begin the vinaigrette by combining the chives, mustard, vinegar, olive oil, and salt and pepper. Mix to combine.
  • Add the chopped fennel and apple to the vinaigrette and mix to combine.
  • Let the slaw sit for at least 20 minutes before serving so it can absorb the dressing.
  • Plating Instructions: Place ham on the plate and top with blackberry bourbon glaze, spoon fennel apple slaw on the side.
