Thaw jumbo franks and bacon in the refrigerator overnight.
Pre-heat grill to 450 degrees Fahrenheit, direct heat.
Wrap one bacon slice around each frank, securing the bacon with one toothpick on each end.
Grill hot dogs away from direct flame for about 10 to 12 minutes total, turning franks 45 degrees about 2 1/2 to 3 minutes on each side, until the bacon gets crispy and the hot dogs are slightly blistered and heated all the way through.
If adding optional cheese, place 1/2 slice to each frank during the last 30 seconds of cooking time.
Split hot dog buns, place face down on grill, and lightly toast for about 15 seconds.
Remove toothpicks from franks and place them in hot dog buns.
Assembly: add mayonnaise, mustard, ketchup, and optional toppings. Finish with tortilla chip crumble. Enjoy!
