- 1 large egg
- 1/2 cup 2% milk
- 1 cup tapioca flour
- 1/2 teaspoon salt
- 1/4 cup mozzarella cheese
- 1/4 cup Italian cheese blend or grated Parmesan cheese

Preheat oven to 400 degrees Fahrenheit.
Use a paper towel to grease inside muffin pan cups with oil.
Use a blender to blend egg, milk, oil, and salt until smooth.
Gradually add tapioca flour 1/4 cup at a time until blended.
Add cheese and perform 5-7 more quick pulses.
Pour mixture into muffin pan cups until each is about 3/4 full.
Bake for 16 minutes or until a light golden brown.
Grilled Chimichurri-Marinated Top Sirloins
Preheat grill to medium-high.
Clean and oil grill grates with non-stick cooking spray.
Add steak to grill and cook for 4 minutes per side to reach medium-rare doneness.
Rest steak for 8 minutes before slicing.
Add slices to the sliders and finish with your favorite toppings, like pickled red onions or additional chimichurri.
