Blackened Shrimp and Farfalle Pasta, Roasted Peppers, and Feta Cheese

Ingredients

  • 16 oz. Omaha Steaks Wild Argentinian Red Shrimp
  • 10 oz. dry farfalle bowtie pasta
  • 4 tablespoons olive oil, divided
  • 1 cup of chopped roasted red peppers
  • 1 cup of crumbled feta cheese
  • Juice of 1/2 a whole lemon
  • 1/4 cup of fresh grated parmesan cheese
  • 2 teaspoons chopped Italian parsley
  • 5 teaspoons blackening seasoning

Instructions

  • Toss defrosted shrimp in 2 tablespoons of olive oil and then season with blackening seasoning 30 minutes prior to cooking.
  • Cook farfalle pasta as per packaging directions.
  • Preheat a large non-stick sauté pan with 2 tablespoons of olive oil over medium-to-high heat.
  • Add the shrimp and cook for 3-4 minutes, or until shrimp are opaque and reach a minimum internal temperature of 140 degrees Fahrenheit, continuously stirring to prevent burning.
  • Add cooked pasta, roasted red peppers, crumbled feta cheese, and lemon juice and toss until fully incorporated.
  • Divide between 4 bowls and top with grated parmesan and chopped parsley.
