Preheat the air fryer to 400 degrees Fahrenheit.
Mix olive oil, salt, pepper, and curry powder (or the seasoning of your choice).
Coat the chicken in the seasoned olive oil.
Use the remaining seasoned olive oil to coat the vegetables.
Air fry the chicken for 10 minutes.
Then add the veggies to the air fryer tray or basket.
Cook the veggies and the chicken all together in the air fryer for an additional 15 minutes.
Serve with rice and chopped cilantro.
