The Southerner Smash Burger

Pimiento Cheese
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup pimientos, small diced
- 4 oz. cream cheese, room temperature
- 1/2 cup mayonnaise
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon kosher salt
- 1/8 black pepper
- 3 dashes hot sauce
Seasoned Flour
- 1/4 cup flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Breading
- 1/2 cup Italian bread crumbs
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon paprika
Fried Green Tomatoes
- 1 large green tomato
- Seasoned flour
- Egg wash

- 1/2 cup vegetable oil

Fried Green Tomatoes
Preheat grill to 400 degrees Fahrenheit with direct heat.
Slice green tomatoes into 1/2"-thick slices crosswise, then lightly season both sides with salt and pepper.
Coat both sides of each tomato with flour, shaking off the excess. Dip in egg wash on both sides, then coat with breading on both sides. Set each slice on a medium plate.
Pour vegetable oil (about 1/2" depth) into a medium-sized cast iron pan. Heat the oil for 90 seconds to 2 minutes until it reaches 375 degrees Fahrenheit, as per a meat thermometer.
Shallow-fry tomatoes on each side for about 60 to 90 seconds until golden brown.
Remove the slices and place them on a paper towel-lined plate to drain excess oil.
Cheeseburger
Keep grill at preheated 400 degrees Fahrenheit with direct heat.
Place frozen burger patties on the grill and cook for 3 minutes, then lightly season one side with salt and pepper.
Flip the burgers and add a slice of American cheese to each patty.
Continue cooking for another 2 minutes, until the burger cooks through and the cheese melts.
Spread mayonnaise on half of the burger bun and toast on the grill for 30 to 45 seconds until golden brown.
Plating: Place the two cheeseburgers on the bottom bun. Top with one fried green tomato, then a heaping spoonful of pimiento cheese, and finish with the top bun.
