Pesto Mayo

An herbaceous mayo spread for burgers

Ingredients

  • 2 teaspoons pine nuts
  • 3 large fresh basil leaves
  • 1/4 cup olive oil
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup mayonnaise
  • 1/4 teaspoon crushed red pepper
  • 1 tablespoon fresh lemon juice
  • Salt and pepper

Instructions

  • In a food processor, add pine nuts, basil, Parmesan cheese, crushed red pepper, and olive oil and blend until finely minced.
  • Place contents in medium bowl, add lemon juice and mayonnaise, and whisk until fully incorporated. Season to taste with salt and pepper.
