Mexican Street Corn Casserole




The ultimate summer side dish, from a culture that knows how to eat in the heat. Known as esquites in Mexico, it's sweet corn roasted and charred, mixed with a creamy sauce of mayo, cotija cheese, and sour cream, and seasoned with fresh jalapeņos and chili powder. Normally, you have to eat esquites straight off the cob, but the Omaha Steaks Test Kitchen brings it to you in easy-to-make, easy-to-serve casserole style that makes exciting outdoor dining a snap. Do not thaw. Cook from frozen.
Oven: Preheat oven to 375°F. Remove plastic from tray. Place tray on a baking sheet and place in the oven. Cook for 45 minutes or until center of the product reaches 165°F.
Grill: Preheat grill to 450°F. Remove plastic from tray. Place tray on foil-lined grill grate. Cook over indirect heat for 45-60 minutes or until center of tray reaches 165°F.
