From Thawed
Oven: Preheat oven to 500°F and season roast with salt and pepper or other seasoning of choice. Place roast on a roasting rack in a roasting pan and place in oven. Turn oven down to 475°F and bake for 30 minutes. Turn the oven off but do not open the door. Allow the roast to remain in oven without opening the door for 1 hour and 15 minutes. Remove roast from oven and tent with foil to rest.
