Bone In Beef Short Ribs

Using high heat, heat oil in a large skillet or Dutch oven and brown short ribs on all sides, about 90 seconds per side. Place short ribs in a single layer in the pan (bone side down) and add enough hot water to come ½ to ¾ the way up the meat. Cover tightly with lid or aluminum foil.
Bake at 325°F. for 3 to 4 hours. Check after the first 2 hours to make sure liquid has not evaporated too quickly. The meat should give to the touch (if you put a meat fork in and twist gently the meat should give without coming off the bone or moving the whole piece). Remove short ribs and allow to rest, turning the ribs over to cool meat side down.
