Preheat your Kamado Joe to 225° – 250°F. Add several chunks of your favorite smoking wood. We recommend apple for this recipe.
Set up grill for indirect cooking. While the grill is preheating, rinse and pat dry your ribs. Coat liberally with the Omaha Steaks Sweet & Smoky Applewood Rub and let sit at room temp while your grill preheats.
Once the grill is preheated and stabilized, put the racks of ribs on the grill, meat side up.
Cook for 2 hours. After 2 hours, remove the ribs from the grill and place on a double thickness of aluminum foil.
Add 1/4 cup of apple juice to the foil and seal the rib racks in the foil.
Place ribs meat side down on the grill in the foil for 45 – 60 minutes.
While that cook is taking place, add the glaze ingredients in a suacepan and mix completely. Turn on the heat to medium and let warm up, stirring constantly.
After the 45 – 60 minutes in the foil remove the ribs from the grill and remove the foil. Place the ribs back on the grill, meat side up and baste them with the glaze every 20 minutes for one hour.
After one hour, these ribs should be tender enough to pull and serve.
