The tenderloin itself runs through the short loin (which also includes the strip) and the sirloin (which includes the top sirloin) sections of the loin primal. This highly-prized cut of beef only represents 2-3% of the total animal. That&#8217;s why it&#8217;s so rare, and why when you <a href=\"https:\/\/www.omahasteaks.com\/buy\/Steaks\/Filet-Mignons?SRC=RZ0636\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">buy filet mignon<\/a>\u00a0it tends to be more expensive than other <a href=\"https:\/\/www.omahasteaks.com\/?SRC=RZ0636\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">steaks<\/a>.<\/p>\n<p>The tenderloin is trimmed into filet mignon steaks or a <a href=\"https:\/\/www.omahasteaks.com\/product\/Butcher%27s-Cut-Chateaubriand-00000020127?SRC=RZ0636\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">chateaubriand<\/a> (tenderloin) roast. If the butcher leaves the tenderloin intact through the short loin, the short loin will be cut into <a href=\"https:\/\/www.omahasteaks.com\/buy\/Steaks\/T-Bones-and-Porterhouses?SRC=RZ0636\" data-wpel-link=\"external\" target=\"_blank\" rel=\"external noopener noreferrer\">T-bone and Porterhouse steaks<\/a>.<\/p>\n<h2><strong>Why Is Filet Mignon Tender? <\/strong><\/h2>\n<p>The secret of its tenderness is due to its location on the animal. The tenderloin is a non-weight bearing muscle and remains relatively unused. Inactivity keeps the muscle from growing too tough through repetitive movement.<\/p>\n<p>Although incredibly tender, filet mignon contains less marbling &#8211; the small streaks of intramuscular fat &#8211; compared to popular steaks like the New York strip or ribeye. But cook it right and it&#8217;s more tender than any &#8211; you can cut it with a dull butter knife.
