Smoky Steaks

2 Omaha Steaks T-bone Steaks
¼ cup Savory Spice Rub
2 cups BBQ Sauce, for serving

  1. Preheat and oil the grill. Tear a piece of heavy-duty aluminum foil into a 12-inch square. Place 1 cup dry wood chips onto foil. Fold foil over to cover chips, then fold edge 3 times, pressing each fold firmly to seal. Fold sides in 3 times pressing each fold firmly to seal.
  2. Press spice rub onto steaks.
  3. Place foil packet directly on the medium coals (place it to one side, not in the center). Grill steaks in the center of the grid (not directly over foil packet) 10 minutes per side for medium-rare, or 12 minutes per side for medium.
  4. Remove the steak from the grill, place on a serving platter and let stand a few minutes. Meanwhile, heat sauce. Slice steaks, season with salt to taste, and serve.

Total Preparation and Cook Time: 30 minutes
