Quick Brown Sauce
Created by the late James Beard, this brown sauce is easy to make. It's delicious, served with most beef cuts from Omaha Steaks, and can be used as base for Bordelaise sauce.
Ingredients
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 cups canned bouillon, soup stock or vegetable stock
  • 1/2 tsp. thyme
  • sprig parsley
  • salt and freshly ground pepper
Preparation
  1. Melt the butter in a heavy saucepan over low heat.
  2. Add flour and blend well over medium heat.
  3. Reduce heat and simmer for several minutes. Heat bouillon or stock, stir into the roux (flour and butter mixture) and continue stirring until sauce thickens.
  4. Add herbs, reduce heat and simmer for several minutes.
Serve with meats or other dishes or use as a base for Bordelaise sauce.
