Ingredients
Crust:
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 egg yolk
Bottom Filling:
  • 1 cup sugar
  • 1 cup dark Karo syrup
  • 3 eggs
  • 2 cups chopped roasted pecans
Cheese Filling:
  • 2 lbs cream cheese
  • 2 cups sugar
  • 3 eggs
  • 1 cup orange juice
Preparation
Crust:
Combine all ingredients except yolk in food processor. Mix until the mixture just starts to stick together. Add the yolk and mix a little more. Press the crust into a greased 10" spring form pan. Bake until golden brown in a 400° oven about 20-30 minutes.


Bottom Filling:
Combine all ingredients in mixer and mix thoroughly. Pour into baked crust.


Cheese Filling:
Combine cheese and sugar in mixer and mix until smooth and fluffy. Slow mixer and mix in orange juice. Add eggs one at a time until just barely mixed in. Pour on top of pecan mixture in pre-baked crust.


Cheesecake:
Bake cheesecake in a 250° oven for about 2 hours or until wood toothpick inserted into the center of the cake comes out clean.
