Ingredients
  • 8 each 4 oz Omaha Steaks Chicken Breasts
  • 1/2 cup olive oil
  • 1 bunch scallions
  • 6 fresh garlic cloves
  • 2 tablespoons fresh ginger
  • 1 each small habanero chiles or scotch bonnets *
  • 1/2 tablespoon allspice
  • 1 tablespoon thyme
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cinnamon
  • 1 tablespoon salt
  • 1/8 cup honey
  • 1/8 cup red wine vinegar
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
Preparation
  1. In a food processor, combine all ingredients but chicken breasts. Process well until smooth.
  2. Coat each chicken breast with the rub and grill until the chicken reaches an internal temperature of 165° F, about 4-5 minutes on each side.
*If you don't like it very hot only use half of a Habanero or omit it completely.
