Thaw in refrigerator.
Preheat oven to 350°F. Season roast as desired. Place roast on an elevated wire rack in a roasting pan with fat side up. Bake uncovered for 1 hour 50 minutes to 2 hours for rare to medium rare; 2 ½ - 2 ¾ hours for medium to medium well done. Remove from oven. Let rest 10-15 minutes before slicing and serving.
Preheat oven to 250°F. Season roast as desired. Heat 2 Tbsp. of cooking oil in a large non-stick sauté; pan over high heat. Carefully place roast in pan to sear. Sear all side for about 2-3 minutes each. Place roast on an elevated wire rack in a roasting pan with fat side up. Roast for 2 ¾ - 3 hours for rare to medium rare; 3 ½ - 4 hours for medium to medium well done. Remove from oven. Let rest 10-15 minutes before slicing and serving.
