Thaw roast in the refrigerator.
Oven: Place Bone-In Rib Roast fat side up on rack in a shallow pan. Rub with freshly ground pepper and if you wish, with a little rosemary, thyme, marjoram or garlic. Preheat oven to 325°. Roast to an internal temperature of 115-120° for rare or 125-130° for medium-rare. For a medium-rare roast, cook the 6 lb. roast for 2 hours, the 12 lb. roast for 21/2 hours. Allow roast to stand 10 minutes before carving. The 6 lb. roast serves 6-8. The 12 lb. roast serves 12-16.
